Ingredients

  • 4 boneless skinless chicken breasts (or thighs for extra juiciness)
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Instructions

  • Prepare the Marinade: In a bowl, mix together the olive oil, garlic, lemon juice, oregano, basil, salt, and pepper. Stir until well combined.
  • Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and make sure it’s well-coated. Seal or cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  • Preheat the Grill: Heat your charcoal or gas grill to medium-high heat. If using a charcoal grill, make sure the coals are hot and glowing before placing the chicken on.
  • Grill the Chicken: Place the marinated chicken on the grill. Cook for about 6-7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (75°C).
  • Rest and Serve: Once grilled to perfection, remove the chicken from the grill and let it rest for 5 minutes before slicing. This allows the juices to redistribute, keeping the chicken moist.
