Ingredients
  

For the Chicken and Gravy

  • 4 pieces chicken breasts or thighs Thighs tend to retain more moisture.
  • 4 cloves garlic, minced Enhances the gravy flavor.
  • 2 cups chicken broth Used for the gravy base.
  • 1 cup heavy cream For creaminess in gravy.
  • 2 tablespoons olive oil For searing chicken.
  • 1 tablespoon butter Adds richness to the gravy.
  • 2 tablespoons flour For thickening the gravy.
  • 1 teaspoon dried thyme Herb for flavor enhancement.
  • Salt and pepper to taste Salt and pepper For seasoning.

For the Mashed Potatoes

  • 4 large potatoes, peeled and cubed For making cheesy mashed potatoes.
  • 1 cup shredded cheddar cheese Primary cheese for flavor.
  • ½ cup milk For creamy consistency.
  • 2 tablespoons sour cream Adds tang and creaminess.
  • Fresh parsley for garnish Fresh parsley Optional garnish for presentation.

Instructions
 

Preparation

  • Season the chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  • In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.

Make the Gravy

  • Sprinkle in the flour and stir to create a roux, cooking for another minute.
  • Gradually whisk in the chicken broth and bring to a simmer, allowing it to thicken slightly.
  • Stir in the heavy cream and dried thyme. Add the chicken back to the skillet. Reduce heat and let simmer for about 20-25 minutes until chicken is thoroughly cooked.

Prepare Mashed Potatoes

  • Boil the cubed potatoes in a large pot of salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add milk, sour cream, and shredded cheddar cheese. Mash until creamy, seasoning with salt and pepper to taste.

Serve

  • Serve the chicken and garlic gravy over a generous scoop of cheesy mashed potatoes. Sprinkle with fresh parsley.
