  • 2 large chicken breasts
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon onion powder
  • 1 tablespoon fresh parsley chopped, optional

Instructions
 

  • Slice each chicken breast in half lengthwise to create four thinner cutlets. Season both sides with salt, pepper, and garlic powder.
  • Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. When hot, add the chicken cutlets.
  • Cook for 4–5 minutes per side, until golden and cooked through. Transfer to a plate and set aside.
  • Reduce heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, whisk in the flour and stir constantly for 1 minute.
  • Gradually whisk in chicken broth until smooth. Add Italian seasoning and onion powder. Simmer until the gravy thickens, about 3–5 minutes.
  • Return chicken to the skillet with any juices. Simmer together for 4–5 minutes, or until the chicken reaches 165°F internally.
  • Taste and adjust seasoning with salt and pepper. Garnish with parsley if desired. Serve hot.

Notes

For added richness, stir in a splash of cream to the gravy. To make it gluten-free, use cornstarch or a gluten-free flour blend instead of all-purpose flour. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
