  • 1 ripe avocado mashed Should be perfectly ripe for optimum creaminess.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different cheeses.
  • 2 tablespoons mayonnaise Can be substituted with Greek yogurt for a healthier option.

Bread and grilling

  • 4 slices bread Choose thick-cut artisanal or multi-grain for best results.

Preparation

  • In a mixing bowl, combine shredded chicken and mashed avocado, then mix in mayonnaise, salt, and pepper.

Assembly

  • Spread the chicken and avocado mixture on two slices of bread.
  • Sprinkle shredded cheese on top and place another two slices of bread on top to complete the sandwiches.

Cooking

  • Preheat a skillet over medium heat and melt butter to coat the skillet.
  • Grill the sandwiches for about 3-4 minutes on each side until golden brown and the cheese is melted.

Serving

  • Remove the sandwiches from the skillet, let them cool for a minute, then cut in half to serve warm.
