  • 2 cups cooked chicken breast, diced Seasoned and cooked chicken
  • 1 cup fresh blueberries
  • 4 cups mixed salad greens (such as spinach, arugula, and romaine)
  • 1/2 cup crumbled feta cheese Add for creamy texture
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts or pecans, chopped Optional for crunch

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • to taste Salt and pepper Adjust to personal preference

Preparation

  • If the chicken breast is not yet cooked, season it with salt and pepper, and then grill or bake until fully cooked. Let it cool before dicing into bite-sized pieces.
  • In a large bowl, combine the mixed salad greens, diced chicken, fresh blueberries, red onion, and nuts.

Making the Dressing

  • In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create a dressing.

Tossing the Salad

  • Drizzle the dressing over the salad mixture and gently toss until everything is well coated.
  • Add the crumbled feta cheese on top and give it a light toss again to incorporate the cheese without breaking it up too much.
  • Serve immediately or refrigerate for a short while to enhance the flavors.
