Ingredients
  

  • 2 pounds Chicken Breasts boneless, skinless
  • 1 medium Onion diced
  • 3-4 cloves Garlic Cloves minced
  • 2 cans Canned White Beans 15 oz each, rinsed and drained
  • 1 can Canned Diced Tomatoes 14.5 oz
  • 1 can Green Chilies 4 oz, diced
  • 4 cups Chicken Broth
  • 1 tablespoon Ground Cumin
  • 1 tablespoon Ground Paprika
  • 2 tablespoons Chili Powder
  • to taste Salt and Pepper
  • 1 tablespoon Olive Oil

Instructions
 

  • Season the chicken breasts with cumin, paprika, chili powder, salt, and pepper. Drizzle with olive oil.
  • Layer the onion, garlic, white beans, diced tomatoes, and green chilies in the crockpot. Pour in the chicken broth.
  • Place the seasoned chicken on top of the layered ingredients. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Shred the chicken using two forks and stir it back into the chili.
  • Serve and garnish with your choice of sour cream, shredded cheese, cilantro, and lime wedges.

Notes

This recipe is great for meal prep and can be made spicier with the addition of jalapeƱos or hot sauce. The longer it cooks, the better the flavors.
