Ingredients

  • 4 tablespoons butter melted
  • 4 cups shredded chicken
  • 1 box cheddar bay biscuit mix 11.36 oz
  • 2 cups milk
  • 12 ounces frozen mixed vegetables
  • 1 cup chicken broth
  • 1 can cream of chicken soup

Instructions
 

  • Preheat your oven to 400°F.
  • Pour the melted butter into a 9x13 casserole dish and spread evenly.
  • Layer shredded chicken and frozen mixed vegetables evenly over the butter.
  • In a bowl, mix the cheddar bay biscuit mix with 2 cups of milk. Pour over the chicken and vegetables without stirring.
  • Whisk the cream of chicken soup and chicken broth together. Pour over the casserole without mixing.
  • Bake uncovered for 40–50 minutes until golden and bubbling.
  • Let the cobbler rest for 5 minutes before serving.

Notes

You can add fresh herbs, swap in extra veggies like mushrooms or spinach, or make it dairy-free by using coconut milk and a dairy-free cream soup.
