  • 2 cups diced potatoes You can use Yukon Gold for a creamier texture.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Homemade broth enhances the flavor.
  • 1 cup heavy cream or milk For a lighter version, use low-fat milk.
  • to taste Salt and pepper
  • optional diced green onions or parsley for garnish Adds a fresh touch.

Preparation and Cooking

  • Prepare your slow cooker.
  • Add the shredded chicken, corn kernels, diced potatoes, chopped onion, and minced garlic to the slow cooker.
  • Pour in the chicken broth, ensuring all ingredients are well immersed.
  • Season with salt and pepper to taste and stir the mixture gently.
  • Cover and cook on high for 3 to 4 hours, or on low for 6 to 7 hours.
  • Once done, stir in the heavy cream or milk and let it cook for an additional 30 minutes.
  • Serve in bowls, garnished with green onions or parsley if desired.

Notes

For thicker chowder, add extra potatoes. Can be easily reheated—add a splash of milk or broth to restore consistency. Store in the refrigerator for up to 3-4 days or freeze for up to 2-3 months.
