Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken thighs or breasts Opt for organic or free-range chicken for better flavor.
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper

For the Grain Base

  • 1 cup cooked rice, quinoa, or your favorite grain (optional) This serves as a hearty base.

For the Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped For garnish.

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and squeezed of excess moisture
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint (optional)
  • to taste Salt and pepper

Instructions
 

Marinating the Chicken

  • In a mixing bowl, combine olive oil, dried oregano, garlic powder, onion powder, salt, and pepper. Add the chicken and coat evenly. Marinate for at least 30 minutes, up to four hours if possible.

Preparing the Tzatziki Sauce

  • In a separate bowl, mix Greek yogurt with the grated cucumber. Add minced garlic, lemon juice, and optional dill or mint. Season with salt and pepper, then refrigerate.

Cooking the Chicken

  • Heat a skillet or grill over medium-high heat. Cook the marinated chicken for about 6-8 minutes on each side until it reaches an internal temperature of 165°F. Let the chicken rest before slicing.

Assembling the Bowls

  • Begin with a layer of your choice of cooked grain at the bottom of each bowl. Add the sliced chicken, followed by cherry tomatoes, diced cucumber, and red onion. Drizzle tzatziki sauce over the top and garnish with parsley.
