Prepare the chicken by trimming and slicing it into bite-sized pieces. Chop the vegetables and set aside.
Cook the Lo Mein noodles according to package instructions until al dente. Drain and set aside.
In a large skillet or wok, heat sesame oil over medium-high heat. Add the chicken and sauté until golden brown and cooked through, about 6-8 minutes.
Add the chopped vegetables to the skillet and sauté for 4-5 minutes until tender but still crunchy.
Return the cooked chicken to the skillet, then add the drained noodles, soy sauce, and minced garlic. Toss everything together for 2-3 minutes until heated through.
Serve hot, garnished with additional green onions if desired.
