Ingredients
  

For the Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup water More as needed to achieve soft dough

For the Filling

  • 1 pound ground chicken
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons green onions, chopped
  • 1 carrot grated
  • 1/4 cup cilantro, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon black pepper
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder Optional for heat
  • A pinch sugar

Instructions
 

Prepare the Dough

  • In a bowl, combine the flour and salt.
  • Gradually add water while mixing to create a soft dough.
  • Knead the dough for about 5-10 minutes until smooth.
  • Cover with a damp cloth and let it rest for at least 30 minutes.

Prepare the Filling

  • In another bowl, mix the ground chicken, ginger, garlic, onion, green onions, carrot, cilantro, soy sauce, black pepper, cumin powder, chili powder, and sugar.
  • Combine everything well so that spices are evenly distributed.

Form the Dumplings

  • After the dough has rested, divide it into small balls, about the size of a golf ball.
  • Roll each ball into a thin round disc, approximately 4-5 inches in diameter.
  • Place a spoonful of chicken filling in the center of each disc.
  • Carefully fold the edge of the dough over the filling, pinching it to secure. Pleat for an authentic look, sealing tightly.

Cooking Methods

  • For steaming, set up a steamer basket lined with parchment paper. Place the dumplings inside, ensuring they don't touch. Steam for about 15-20 minutes or until chicken is cooked through.
  • For frying, heat oil in a pan and add the dumplings. Fry until golden brown.

Serving

  • Serve the dumplings hot alongside your favorite dipping sauce.

Notes

You can prepare the dumplings ahead of time and store them in the fridge for a few days or freeze them uncooked for up to three months. Experiment with different filling ingredients and dipping sauces for varied flavors.
