  • 2 cups shredded chicken breasts Use leftover rotisserie chicken for added flavor.
  • 1 cup small pasta shapes (pastina) Cook according to package instructions.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken stock Using high-quality stock enhances the flavor.
  • Salt and pepper to taste
  • Olive oil for sautéing Use a swirl enough to coat the bottom of the pot.

Preparation

  • Heat a swirl of olive oil in a large pot over medium heat.
  • Add the diced onions, carrots, and celery. Sauté for about 5-7 minutes until softened and fragrant.
  • Pour in the chicken stock and bring to a rolling boil.
  • Once boiling, add the small pasta shapes and cook according to package instructions (usually 5-7 minutes).
  • Gently stir in the shredded chicken and season with salt and pepper.
  • Serve the soup in bowls and garnish with fresh herbs or grated Parmesan cheese if desired.

Notes
