Ingredients
  

For the Pizza Base

  • 1 pound pizza dough a good foundation for your pizza
  • 2 teaspoons olive oil adds richness and helps with browning
  • 1/2 cup barbecue sauce the star of the show for flavor

For the Toppings

  • 1 cup low-moisture shredded mozzarella cheese for the ultimate cheesiness
  • 1 cup shredded smoked Gouda cheese to introduce that smoky flavor
  • 8 ounces cooked chicken breast, chopped protein that brings it all together
  • 1/4 cup thinly sliced red onion for a touch of sharpness
  • to taste garnish chopped fresh cilantro brightens your dish

For Dusting

  • as needed garnish finely ground cornmeal this helps prevent sticking
  • as needed garnish all-purpose flour for rolling out dough

Instructions
 

Preparation

  • Preheat your oven to 450°F and arrange a rack in the bottom third of your oven with a heavy baking sheet upside down on this rack.
  • Divide the pizza dough into two equal pieces and dust a 12-inch piece of parchment paper with cornmeal. Roll out one piece into a thin 10-inch round. Use all-purpose flour if dough is sticky.
  • Once the dough is rolled out, slide it onto the back of the preheated baking sheet using the parchment paper.

Assembly

  • Brush half of the olive oil over the dough and spread half of the barbecue sauce over it, leaving about a 1/2-inch border.
  • Layer half of the mozzarella and Gouda cheese over the sauce, add half of the chopped chicken and sliced red onion.

Baking

  • Bake the pizza in the oven until the edges are golden-brown and crisp, approximately 10 to 12 minutes.
  • Remove the pizza from the oven and garnish with freshly chopped cilantro. Cool for 2 minutes before slicing.

Repeat

  • Use the remaining dough and toppings to create a second pizza by following the same steps.
