  • 2 cups cooked chicken, diced Can use leftover rotisserie chicken.
  • 1 box Rice-A-Roni (chicken flavor) Follow package instructions for preparation.
  • 1 can cream of mushroom soup Can be swapped with cream of chicken.
  • 1 cup milk Use low-fat if desired.
  • 1 cup shredded cheese (optional) Cheddar, mozzarella, or pepper jack work well.
  • 1 cup mixed vegetables (optional) Add for nutritional value; can include broccoli, peas, etc.
  • Salt and pepper to taste Essential for flavor enhancement.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare the Rice-A-Roni according to package instructions.
  • In a large mixing bowl, combine diced cooked chicken, prepared Rice-A-Roni, cream of mushroom soup, and milk.
  • Add mixed vegetables if using and mix until evenly coated.
  • Season the mixture with salt and pepper to taste.
  • Pour the mixture into a greased casserole dish.
  • Sprinkle half of the shredded cheese on top.

Baking

  • Bake in the preheated oven for 25-30 minutes until the casserole is heated through and the cheese is bubbling and golden brown.
  • Allow to rest for a few minutes before serving.

Notes

This casserole can be made ahead and stored in the fridge. It also freezes well in individual portions for later use.
