Chicken rice is a simple and satisfying dish that combines tender chicken and fluffy rice. Perfect for any meal, it brings comfort and flavor to the table.
Heat olive oil in a skillet over medium heat. Add chicken breasts, season with salt and pepper, and cook until browned and cooked through (about 6-7 minutes per side). Remove and set aside.
In the same skillet, sauté onions and garlic until softened, about 2 minutes.
Add rice to the skillet and stir for 1 minute. Add chicken broth and thyme, bring to a boil.
Reduce the heat to low, cover, and let the rice cook for 15-20 minutes or until tender and liquid is absorbed.
Slice the cooked chicken and serve over the rice. Garnish with extra herbs if desired.
