Ingredients
  

  • 2 pieces Chicken Breasts boneless, skinless
  • 1 cup Rice white or brown
  • 2 cups Chicken Broth low-sodium preferred
  • 1 small Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • to taste Salt
  • to taste Pepper
  • 1 tsp Thyme dried or fresh

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chicken breasts, season with salt and pepper, and cook until browned and cooked through (about 6-7 minutes per side). Remove and set aside.
  • In the same skillet, sauté onions and garlic until softened, about 2 minutes.
  • Add rice to the skillet and stir for 1 minute. Add chicken broth and thyme, bring to a boil.
  • Reduce the heat to low, cover, and let the rice cook for 15-20 minutes or until tender and liquid is absorbed.
  • Slice the cooked chicken and serve over the rice. Garnish with extra herbs if desired.

Notes

This dish is versatile, so feel free to swap out the chicken for another protein, or use different herbs for added flavor.
