Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 1/2 cup apples diced
  • 1/2 cup grapes halved
  • 1/2 cup carrots finely chopped or shredded
  • 1/4 cup red onion finely chopped
  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tablespoon of Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • Prep the Chicken: If you haven’t already, cook your chicken. You can either grill, bake, or poach it. Once it's cooked, shred or dice it into bite-sized pieces. Make sure it's cooled down before adding it to the salad for the best texture.
  • Prepare the Veggies and Fruits: Dice the apples, halve the grapes, and finely chop the carrots and red onion. For the apples, I recommend using a crisp variety like Granny Smith or Honeycrisp to add a fresh crunch.
  • Make the Dressing: In a separate bowl, combine the Greek yogurt (or mayo), Dijon mustard, salt, and pepper. Stir well until it’s smooth and creamy. If you like a tangier dressing, you can add a little extra mustard or a splash of lemon juice.
  • Combine Everything: In a large mixing bowl, add the chicken, apples, grapes, carrots, and red onion. Pour the dressing over the ingredients and toss everything together until evenly coated.
  • Taste and Adjust: Give your salad a taste and adjust the seasoning if needed. If you prefer more sweetness, you can add a little extra apple or grapes. If you like a bit of zing, a pinch more mustard works wonders!
  • Chill and Serve: If you have time, let the salad chill in the fridge for 30 minutes to allow the flavors to meld. Otherwise, it’s ready to serve right away!
