Ingredients
  

For the Chicken Scampi

  • 2 pieces boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes (optional) For added spice

For the Garlic Parmesan Rice

  • 1 tablespoon butter
  • 1 cup white rice
  • 2 cups chicken broth
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley

Instructions
 

Preparation of Chicken

  • Season the chicken breasts with salt, black pepper, and paprika.
  • Heat olive oil in a skillet over medium heat and cook the chicken for about 5-6 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.

Preparing the Sauce

  • In the same skillet, add butter and minced garlic, sautéing for 1-2 minutes without burning the garlic.
  • Pour in the chicken broth and lemon juice, deglazing the skillet and stirring in lemon zest. Let simmer for about 3-4 minutes.
  • Return the chicken to the skillet and drizzle the sauce over it. Simmer for another 2-3 minutes.

Making the Garlic Parmesan Rice

  • Melt butter in a saucepan, add minced garlic and sauté for 1 minute.
  • Stir in the white rice and toast for about a minute.
  • Add chicken broth, bring to a boil, reduce heat to low and cover, simmering for 15 minutes.
  • Remove lid, fluff rice, and mix in parmesan cheese and chopped parsley.

Serving

  • Plate the garlic parmesan rice, top with chicken and spoon over sauce.
  • Garnish with fresh parsley and optional red pepper flakes for heat.

Notes

Best served fresh, but leftovers can be stored in airtight containers. Reheat chicken separately from rice for optimal texture.
