Instructions
In a large bowl, mix olive oil, soy sauce, lemon juice, smoked paprika, garlic powder, onion powder, salt, and black pepper.
Toss in the chicken pieces and ensure each one is coated well. Cover and refrigerate for at least 30 minutes (up to 8 hours for deeper flavor).
If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
Thread marinated chicken onto skewers, leaving a small gap between each piece.
Grill: Preheat to medium-high. Place skewers directly on the grill. Cook for 10–12 minutes, turning every 2–3 minutes.
Oven: Preheat to 425°F. Line a baking sheet with foil or parchment. Bake skewers for 20–25 minutes, flipping halfway.
Stovetop: Use a grill pan or skillet over medium heat. Cook for 10 minutes, turning to brown on all sides.
Rest for 5 minutes, then serve with your chosen sides or dipping sauces.
Notes
Use metal skewers for convenience, but wooden ones work well if soaked properly. Feel free to try different marinades for new flavors.
