Ingredients
  

For the marinade

  • 3 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt

For the tacos

  • 2 pieces boneless, skinless chicken breasts (about 1 pound)
  • 8 small corn tortillas
  • 1 medium onion, diced
  • 1 cup fresh cilantro, chopped
  • 2 pieces limes

Instructions
 

Preparation

  • Combine olive oil, minced garlic, ground cumin, chili powder, and salt in a bowl to create the marinade.
  • Coat the chicken breasts in the marinade, ensuring they are thoroughly covered. Let marinate for at least 30 minutes or preferably overnight.

Cooking

  • Preheat the grill to medium-high heat.
  • Grill the marinated chicken breasts for about 6 to 8 minutes on each side, checking for an internal temperature of 165°F.
  • Remove the chicken from the grill and allow it to rest for several minutes before slicing it into thin strips.
  • Warm the corn tortillas on the grill for a few seconds on each side or in a hot pan.

Assembly

  • Take a warmed tortilla, place some chicken strips on top, and add diced onions and fresh cilantro.
  • Squeeze fresh lime juice over the assembled tacos before serving immediately.

Notes
