  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons minced garlic
  • 2 pounds chicken thighs

Preparation

  • Gather a large mixing bowl and add the olive oil to it.
  • Sprinkle in the brown sugar and stir until combined, ensuring the sugar starts dissolving.
  • Pour in the soy sauce, followed by the lemon zest, and mix to create a balanced flavor profile.
  • Add the chopped parsley and thyme to the mixture.
  • Measure and incorporate the salt, pepper, and minced garlic.
  • Add the chicken thighs to the marinade and coat them thoroughly.
  • Cover the bowl and refrigerate for at least 1 hour, but preferably for 2 to 24 hours for deeper flavor.

Cooking

  • Remove the chicken thighs from the marinade and let excess marinade drip off.
  • Cook the chicken using your preferred method: grilling, baking, or pan-searing.

Notes

For optimal flavor, marinate chicken thighs for at least 2 to 6 hours. You can use leftover marinade to baste the chicken during cooking, but ensure it is boiled if it has come into contact with raw chicken.
