  • 6 pieces chicken thighs, bone-in and skin-on
  • Salt and freshly cracked black pepper, to taste
  • 2 tbsp avocado oil
  • 1 cup chicken stock
  • ½ cup chicken broth
  • 1 tbsp tomato paste
  • 1 onion onion, chopped
  • 2 cloves garlic, chopped
  • 1 small carrot, peeled and diced
  • 1 stalk celery, chopped
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • Chopped fresh parsley, for garnish
  • Rice, for serving

Instructions
 

Preparation

  • Season the chicken thighs generously with salt and freshly cracked black pepper on both sides.
  • Heat the avocado oil in a large skillet over medium-high heat.
  • Carefully place the chicken thighs skin-side down in the skillet and sear for about four minutes until golden-brown.
  • Flip the chicken thighs and sear for another four minutes on the other side. Remove from skillet and set aside.

Cooking

  • In the same skillet, sauté the chopped onion and garlic in the remaining oil for about two minutes until translucent.
  • Add the diced carrot and chopped celery; sauté for an additional three minutes.
  • Stir in the tomato paste, chicken broth, and chicken stock until the tomato paste dissolves.
  • Add the dried rosemary and thyme, bringing everything to a gentle boil.
  • Return the chicken thighs to the skillet, cover, and reduce heat to medium-low, allowing to simmer for about 15 minutes until fully cooked.
  • Taste the sauce and adjust seasoning if necessary before serving.

Serving

  • Plate a generous scoop of fluffy rice, followed by a couple of chicken thighs topped with rich sauce.
  • Garnish with chopped fresh parsley and serve hot.

Notes
