  • 1 tsp oregano
  • Salt and pepper to taste To season

Preparation

  • Start by placing your chicken breasts in a slow cooker.
  • In a mixing bowl, combine the sliced onion, minced garlic, canned diced tomatoes, chipotle peppers, cumin, oregano, salt, and pepper. Mix well.
  • Pour this mixture over the chicken in the slow cooker, ensuring the chicken is well-coated.
  • Cover and set the slow cooker to cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken using two forks and mix it back into the sauce.

Serving

  • Serve warm in tortillas or over rice with desired toppings like avocado, cilantro, or lime.

Notes

For a milder flavor, reduce the chipotle peppers. Fresh ingredients enhance the flavor. Chicken thighs can be used for richer taste. Store in an airtight container for up to 3-4 days in the fridge or freeze for up to three months.
