  • 1 can (15 ounces) chickpeas, drained and rinsed Provides protein and fiber
  • 1/2 cup almond butter or peanut butter Alternative nut butters can be used
  • 1/4 cup maple syrup or honey Natural sweeteners
  • 2 teaspoons vanilla extract For flavor
  • 1/2 teaspoon baking soda Acts as a leavening agent
  • 1/4 teaspoon salt Enhances overall flavor
  • 1/2 cup chocolate chips or carob chips Use dairy-free for a vegan version

Optional Toppings

  • chopped nuts For added texture
  • dried fruits Like cranberries or raisins for sweetness

Instructions
 

Preparation

  • Combine the chickpeas, almond butter, maple syrup, vanilla extract, baking soda, and salt in a food processor.
  • Blend the mixture on high until smooth and creamy, scraping down the sides as needed.
  • Fold in the chocolate chips or carob chips using a spatula.
  • Taste the dough, and adjust sweetness or salt if desired.
  • Transfer the chickpea cookie dough to a mixing bowl or container, and chill it in the refrigerator for about 30 minutes to firm up.

Serving Suggestions

  • Serve right from the bowl or roll into bite-sized balls for a fun, portable snack.
  • Enjoy it as a dip with sliced fruits like apples, bananas, or strawberries.
  • Use it as a topping on yogurt or oatmeal.
