  • 1/2 teaspoon baking soda For leavening.
  • 1/4 teaspoon salt Enhances flavor.
  • 1/2 teaspoon vanilla extract For flavor enhancement.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine chickpea flour, baking soda, and salt, and whisk until fully blended.
  • In another bowl, mix maple syrup, almond butter, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully combined without overmixing.
  • Optionally fold in chocolate chips or dried fruits.
  • Using a spoon or cookie scoop, dollop the dough onto a lined baking sheet, leaving space between each.

Baking

  • Bake for about 10-12 minutes, until the edges are golden brown.
  • Let cool on the baking sheet for a few minutes before transferring to a cooling rack.
