  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup natural peanut butter or almond butter Can use almond butter for a nut-free option.
  • 1/3 cup honey or maple syrup Maple syrup for a vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts (optional) Can substitute with dried fruits or spices for different flavors.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, add chickpeas, nut butter, honey or maple syrup, vanilla extract, baking soda, and salt.
  • Blend until smooth and creamy, scraping down the sides as needed.
  • If using, stir in chocolate chips or chopped nuts by hand.
  • Form rounded dough balls using a tablespoon or small scoop and place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each dough ball slightly with the back of a spoon or fingers.
  • Bake for about 10-12 minutes, or until the edges are set and the centers look slightly undercooked.
  • Remove from the oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
