  • 1 can chickpeas, drained and rinsed Canned chickpeas save time; you can also use dried chickpeas if prepared beforehand.
  • 1 onion, chopped Adds sweetness to the soup.
  • 2 cloves garlic, minced Enhances the flavor profile.
  • 1 carrot, diced Provides texture and sweetness.
  • 2 cups vegetable broth Use low-sodium if preferred.
  • 1 cup spinach (frozen or fresh) Fresh spinach wilts into the soup easily.
  • 1 teaspoon cumin For flavor depth.
  • Salt and pepper to taste Adjust based on preference.
  • Olive oil for sautéing Keeps the ingredients from sticking.

Preparation

  • Heat a drizzle of olive oil in a large pot over medium heat until shimmered but not smoking.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add minced garlic and diced carrot, sautéing for another 3-4 minutes.
  • Stir in rinsed chickpeas, vegetable broth, and cumin, bringing the mixture to a boil.
  • Once boiling, reduce the heat and let simmer for about 10-15 minutes to meld flavors.
  • Add spinach and cook for an additional 5 minutes.
  • Season with salt and pepper to taste before serving.
