Ingredients

  • 1 lb shrimp (peeled and deveined, tail-on) Choose large-sized fresh shrimp for best results.

Marinade

  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro leaves (or parsley) Chopped finely.
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic Chopped finely.
  • 1/2 tablespoon honey
  • 1 pinch salt

Instructions
 

Preparation

  • Soak bamboo skewers in cold water for about 15-30 minutes.
  • Rinse shrimp under cold water and pat dry using a clean kitchen towel.
  • In a mixing bowl, combine lime juice, olive oil, cilantro (or parsley), sweet chili sauce, garlic, honey, and salt. Mix thoroughly.
  • Toss shrimp in the marinade, cover, and let marinate in the refrigerator for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Thread marinated shrimp onto soaked skewers, leaving some space between each shrimp.
  • Grill skewers for 2-3 minutes on each side, until shrimp turn pink and show slight charring.
  • Remove from grill and serve immediately with lime wedges.
