Ingredients

Main Ingredients

  • 1 package ramen noodles Discard the seasoning packet.
  • 4 cups shredded cabbage (green and/or red)
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1/2 cup slivered almonds

Dressing

  • 1/4 cup vegetable oil
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar

Instructions

Preparation

  • Break the ramen noodles into small pieces by hand or using a rolling pin, being careful not to crush them too finely.
  • In a large mixing bowl, combine the broken ramen noodles, shredded cabbage, shredded carrots, sliced green onions, and slivered almonds.

Dressing

  • In a separate bowl, whisk together the vegetable oil, rice vinegar, soy sauce, and sugar until well combined.

Mixing

  • Pour the dressing over the salad mixture and toss gently to ensure all ingredients are coated evenly.
  • Let the salad sit for about 10 to 15 minutes to allow flavors to meld and noodles to soften slightly.
  • Before serving, give the salad another gentle toss to redistribute flavors.

Serving

  • Serve as a delightful side dish or light meal. Optionally, top with extra almonds or a sprinkle of sesame seeds.

Notes

For best results, use fresh vegetables. Mix the salad and dressing separately if storing for leftovers to maintain crunchiness.
