Chinese Peanut Butter Chicken

Ingredients
  

For the chicken and marinade

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons sesame oil divided

For the peanut butter sauce

  • 1/2 cup peanut butter smooth and creamy
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 cup chicken broth

For the vegetables

  • 1 cup broccoli florets

To serve

  • Steamed rice or noodles for serving

Instructions
 

Preparation

  • In a bowl, mix chicken pieces with soy sauce, honey, rice vinegar, and a tablespoon of sesame oil. Allow to marinate for at least 30 minutes in the refrigerator.
  • In a separate bowl, combine peanut butter, minced garlic, minced ginger, and chicken broth. Stir until smooth and well-blended. Set aside.

Cooking

  • Heat a large skillet or wok over medium-high heat and add the remaining tablespoon of sesame oil. Once hot, add marinated chicken and cook for about 5 to 7 minutes until browned and cooked through.
  • Add sliced red bell pepper, broccoli florets, and carrot to the skillet. Stir-fry for another 4 to 5 minutes until tender but still crisp.
  • Pour the peanut butter sauce over chicken and vegetables, mixing well to coat. Cook for an additional 2 to 3 minutes.
  • Serve immediately, garnished with chopped green onions over steamed rice or noodles.
