Ingredients
  

Egg Mixture

  • 4 large large eggs
  • 1 tablespoon chipotle sauce
  • Salt Salt to taste
  • Black pepper Black pepper to taste

Sandwich Assembly

  • 4 slices slices of cheese Your choice of cheese
  • 4 units English muffins or bagels
  • 1 cup fresh spinach or arugula
  • 1/2 cup diced tomatoes
  • 1 unit avocado, sliced
  • 1 tablespoon olive oil For cooking eggs
  • Optional salsa for serving

Instructions
 

Preparation

  • Heat the olive oil in a skillet over medium heat.
  • Crack the eggs into a bowl and whisk in the chipotle sauce, salt, and pepper.
  • Pour the egg mixture into the heated skillet and scramble until cooked to your liking.
  • Slice the English muffins or bagels in half and toast them until golden brown.

Assembly

  • Once the eggs are ready, assemble your sandwich. Place a slice of cheese on the bottom half of each toasted muffin or bagel.
  • Add the scrambled eggs on top of the cheese, allowing it to melt slightly.
  • Layer sliced avocado, fresh spinach or arugula, and diced tomatoes on top of the eggs.
  • Finish with the top half of the muffin or bagel.

Serving

  • Serve with a side of salsa, fresh fruit, tortilla chips, or hash brown patties.

Notes
