Ingredients
  

Shrimp and Marinade

  • 1 pound shrimp, deveined and peeled Fresh or properly thawed
  • 1/4 cup chipotle marinade For marinating shrimp
  • 1 lime, juice of Squeezed over shrimp

Base Ingredients

  • 1 cup rice (white or brown) Cooked according to package instructions
  • 1 count avocado, sliced Fresh
  • 1 can (15 ounces) black beans, rinsed and drained Canned for convenience
  • 1 cup corn (fresh, canned, or frozen) Your choice
  • salsa Store-bought or homemade, to taste

Instructions
 

Marinating the Shrimp

  • Place the deveined and peeled shrimp in a bowl.
  • Pour 1/4 cup of chipotle marinade over the shrimp and squeeze the juice of one lime into the mix.
  • Ensure the shrimp are evenly coated in the marinade and let marinate for at least 30 minutes in the refrigerator.

Cooking

  • Prepare the rice according to package instructions and keep it warm.
  • Heat a skillet over medium heat and add the marinated shrimp to the pan.
  • Sauté the shrimp for about 3-4 minutes until they turn pink and are cooked through.

Assembly

  • In a large serving bowl or individual bowls, start with a base of rice.
  • Layer the succulent shrimp on top.
  • Add sliced avocado, black beans, and corn.
  • Finish with a generous spoonful of salsa.
