  • 1/4 cup coconut oil, melted Can substitute with another oil
  • 1/4 cup maple syrup or honey Maple syrup for vegan option
  • 1 teaspoon vanilla extract

Mix-ins

  • 1/2 cup chocolate chips Use dark chocolate chips for a healthier option

Instructions
 

Preparation and Mixing

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the almond flour, baking soda, and salt.
  • In another bowl, mix melted coconut oil, maple syrup (or honey), and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and combine gently until no dry flour remains.
  • Fold in the chocolate chips.

Baking

  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each.
  • Bake in the preheated oven for 10-12 minutes.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
