Ingredients
  

Cookie Base

  • 113 g unsalted butter, melted (1 stick / ½ cup / 4oz) Ensure it's melted for proper mixing.
  • 195 g plain flour (1 ½ cups / ~7oz) Measured by weight for accuracy.
  • ¾ teaspoon baking soda
  • ½ teaspoon salt Enhances flavor.
  • cup light brown sugar (135g / 4.8oz)
  • ¼ cup white granulated sugar (50g / 1.8oz)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract For flavor.

Mix-Ins

  • 1 cup dark chocolate chunks or chocolate chips (180g / 6.4oz) Rich chocolate flavor.
  • ¾ cup shelled roasted pistachios, roughly chopped (110g / ~4oz) Adds crunch.
  • to taste sea salt flakes (for finishing) Garnish for flavor contrast.

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F) and line two large baking sheets with parchment paper.
  • In a medium bowl, whisk together the plain flour, baking soda, and salt, then set aside.
  • In a large bowl, combine the melted butter, light brown sugar, white sugar, egg, egg yolk, and vanilla extract. Mix until creamy.
  • Gently fold the flour mixture into the wet mixture until about 90% combined.

Mixing Dough

  • Reserve a handful of chocolate chips and pistachios for later. Mix the remaining chocolate and pistachios into the dough.
  • Let the cookie dough rest for about 10 minutes.

Shaping Cookies

  • Roll the dough into balls about the size of a ping pong ball. For best results, use a cookie scoop.
  • Dip the tops of the dough balls in the reserved chocolate chips and pistachios.
  • Place on the prepared baking sheets, leaving at least 2 inches between them.

Baking

  • Bake in the preheated oven for about 12 minutes or until the edges are golden brown.
  • Sprinkle sea salt over cookies while they are still warm.
  • Allow cookies to cool on the baking tray for a few minutes before transferring to a cooling rack.

Notes

For an enhanced flavor, allow dough to chill for 30 minutes before baking. Store in an airtight container with a slice of bread to keep them fresh.
