Ingredients
  

Main Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup shredded zucchini squeeze out excess moisture
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a standard 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  • In another bowl, combine sugar, oil, eggs, and vanilla until smooth.
  • Add the wet ingredients to the dry ingredients and mix just until combined.
  • Fold in the shredded zucchini and chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra crunch, sprinkle chopped walnuts or pecans on top before baking. You can also use dark chocolate chips for a richer taste.
