Instructions
Prepare a 9-inch square pan by lining it with foil or plastic wrap, leaving an overhang for easy removal.
In a food processor, combine the softened butter and grated cheddar cheese. Process until smooth and creamy.
Add the vanilla and chocolate extract and pulse until combined.
Transfer the mixture to a mixing bowl and gradually stir in the cocoa powder until fully blended.
Slowly add the powdered sugar one cup at a time, mixing until the mixture reaches a fudge-like consistency.
Pour the mixture into the prepared pan, spreading it evenly with a spatula.
Cover and refrigerate for several hours until the fudge is firm.
Once set, lift the fudge out of the pan using the overhang and cut it into small squares to serve.
