In a microwave-safe bowl, combine white chocolate chips and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Once melted, add chow mein noodles to the chocolate mixture, gently folding until the noodles are evenly coated.
Using a tablespoon or cookie scoop, drop mounds of the chocolate-coated noodle mixture onto baking sheets lined with parchment paper.
While the chocolate is still warm, sprinkle festive sprinkles on top of each mound.
Let the cookies sit for about 15 minutes to set. If desired, place the baking sheet in the fridge for quicker setting.
