Cookie Dough Ingredients

  • 1 cup unsalted butter, softened Ensure butter is room temperature.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour Could use gluten-free flour as an alternative.
  • 1 cup ground hazelnuts Toast for a deeper flavor, if desired.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Filling and Toppings

  • 1 cup chocolate hazelnut spread Warm slightly for easy pouring.
  • to taste chopped hazelnuts Optional for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

Mixing Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, ground hazelnuts, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Shaping and Baking

  • Use a small cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Make an indentation in the center of each cookie using your thumb or the back of a spoon.
  • Bake for about 10-12 minutes until the edges are lightly golden.
  • Remove from the oven and let cool for a few minutes before transferring to a wire rack.

Filling

  • Once cooled, fill the thumbprint indents with warmed chocolate hazelnut spread and garnish with chopped hazelnuts if desired.
