Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Make sure butter is softened but not melted.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs Add eggs one at a time.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup cocoa powder Use quality cocoa for best flavor.
  • 1 ½ cups chocolate chips Choose your favorite type of chocolate.
  • 1 ½ cups mini marshmallows For topping.

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat them until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
  • In a separate bowl, whisk together flour, baking soda, salt, and cocoa powder. Gradually add to the wet mixture and mix until combined.
  • Fold in the chocolate chips using a spatula.

Baking

  • Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between each cookie.
  • Bake for about 10-12 minutes. The edges should be set, and the centers may look slightly undercooked.
  • Remove cookies and place 3-4 mini marshmallows on top while warm, allowing them to melt slightly.
  • Cool on baking sheets for about 5 minutes before transferring to wire racks.

Notes

Chill cookie dough for at least 30 minutes for thicker cookies. Consider adding nuts or dried fruits for variations.
