Ingredients
  

Wet Ingredients

  • 1 cup unsalted butter, softened Should be softened but not melted.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure peppermint extract Can be adjusted to taste.

Dry Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup semi-sweet chocolate chips Good-quality chocolate recommended.
  • 1/2 cup peppermint candies, crushed

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the peppermint extract.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips and crushed peppermint candies.

Baking

  • Drop spoonfuls of dough onto ungreased baking sheets, leaving some space between them.
  • Bake for 10-12 minutes or until the edges are set; the centers will look slightly soft.
  • Remove from the oven and let them cool on the baking sheets for about 5 minutes before transferring to wire racks to cool completely.

Notes

For best results, chill the dough for at least 30 minutes before baking. Store cookies in an airtight container; consider adding a slice of bread to maintain softness.
