Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Add-Ins

  • 1 cup chocolate chips
  • ½ cup nuts or dried fruit (optional) Can use your choice of nuts or dried fruit

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix the flour, oats, cocoa powder, baking soda, and salt until well combined. Set aside.
  • In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the egg and vanilla extract, mixing until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips and optional nuts or dried fruit, if using.
  • Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the cookies are set and slightly soft in the center.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For an extra chewy texture, replace half of the granulated sugar with brown sugar. Store cookies in an airtight container for up to one week or freeze for up to three months.
