Cilantro Lime Shrimp

Ingredients
  

Main Ingredients

  • 1.5 pounds peeled and deveined jumbo shrimp
  • 1/4 teaspoon ground cumin plus 1/8 teaspoon
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 2 teaspoons extra-virgin olive oil divided
  • 5 cloves garlic crushed
  • 2 tablespoons lime juice (from 1 medium lime)
  • 3-4 tablespoons fresh cilantro chopped

Instructions
 

Preparation

  • Season the shrimp with ground cumin, kosher salt, and black pepper.
  • Heat a large nonstick skillet over medium-high heat.

Cooking

  • Add 1 teaspoon of olive oil to the hot pan and then add half of the seasoned shrimp. Cook undisturbed for about 2 minutes.
  • Flip the shrimp and cook until opaque throughout, about another minute. Transfer to a plate.
  • Add the remaining 1 teaspoon of olive oil to the pan and repeat with the remaining shrimp. After flipping, add the crushed garlic.
  • Once cooked, return the first batch of shrimp to the skillet. Toss everything well.
  • Remove from heat and squeeze fresh lime juice over the shrimp. Sprinkle chopped cilantro and toss to combine.
