Cilantro Lime Shrimp Tacos with Creamy Slaw

Ingredients
  

For the shrimp

  • 1 pound fresh shrimp, peeled and deveined Use fresh shrimp for best flavor.
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the creamy slaw

  • 1 cup green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • ½ cup carrots, grated
  • ½ cup mayonnaise
  • 2 tablespoons lime juice For the slaw.
  • 1 tablespoon honey
  • ½ cup fresh cilantro, chopped

For assembly

  • 8 small corn or flour tortillas
  • Slices of lime (for serving)
  • Extra cilantro leaves (for garnish)

Instructions
 

Marinate Shrimp

  • In a large bowl, mix the shrimp with olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Let the shrimp marinate for 15-30 minutes.

Prepare the Slaw

  • In another bowl, combine the green cabbage, red cabbage, and grated carrots.
  • In a small bowl, whisk together the mayonnaise, lime juice, honey, and chopped cilantro. Pour the dressing over the cabbage mixture and toss until well combined.

Cook Shrimp

  • Heat a large skillet over medium-high heat and add the marinated shrimp. Cook for 2-3 minutes on each side until pink and opaque.

Assemble Tacos

  • Warm the tortillas in a separate dry skillet or microwave. Place a few shrimp in each tortilla, top with creamy slaw, and garnish with additional cilantro leaves. Serve with lime wedges.
