Ingredients
  

For the Banana Bread

  • 3 large ripe bananas, mashed Use very ripe bananas for the best flavor.
  • 1/4 cup salted butter, at room temperature Room temperature for easy mixing.
  • 1 cup white sugar
  • 1 large egg Can be substituted with flaxseed meal for a vegan option.
  • 1.5 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

For the Cinnamon Swirl

  • 1/4 cup salted butter, melted and cooled to room temperature
  • 2 teaspoons cinnamon
  • 1/3 cup brown sugar

For the Cream Cheese Frosting

  • 2 ounces full-fat cream cheese, at room temperature
  • 2 tablespoons salted butter, at room temperature
  • 3/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan, optionally lining it with parchment paper for easy removal.
  • In a large mixing bowl, cream together the room temperature salted butter and white sugar until light and fluffy.
  • Add the egg and mix until smooth, then fold in the mashed bananas until well combined.

Making the Batter

  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually fold the dry mixture into the wet ingredients gently to maintain the airy texture.

Creating the Cinnamon Swirl

  • In another bowl, mix the melted butter, cinnamon, and brown sugar to create the cinnamon swirl mixture.
  • Pour half of the banana batter into the prepared loaf pan, spreading evenly.
  • Layer half of the cinnamon mixture on top, spreading it out evenly.
  • Pour the remaining half of the banana batter over the first cinnamon layer and top with the rest of the cinnamon mixture.
  • Use a butter knife to gently swirl the batter, being careful not to overmix.

Baking

  • Place the loaf pan in the preheated oven and bake for about 55 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Allow the loaf to cool in the pan for a few minutes before transferring it to a wire rack.

Frosting

  • Mix together the cream cheese, salted butter, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the banana bread has cooled, spread the frosting generously over the top.

Notes

For a more indulgent treat, serve warm with extra cream cheese frosting. Store bread tightly wrapped to maintain freshness. Can also freeze slices for later enjoyment.
