Cinnamon Roll Cheesecake Cookies

Ingredients
  

For the Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons ground cinnamon

For the Cheesecake Filling

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract (for cheesecake filling)

For the Swirl Topping

  • 1 tablespoon butter, melted
  • 2 tablespoons extra cinnamon sugar for sprinkling (combine 2 tablespoons sugar with 1 teaspoon cinnamon)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  • Gradually add the dry mixture to the wet ingredients, mixing until fully combined.

Cheesecake Filling

  • In a separate bowl, combine the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.

Assembly

  • Take a tablespoon of the cookie dough and flatten it in your hand.
  • Add a small spoonful of the cheesecake mixture in the middle and fold the dough around it, rolling it into a ball.
  • Place the dough balls onto the prepared baking sheets, leaving space between each cookie.
  • Drizzle the melted butter on top of each cookie and sprinkle a pinch of cinnamon sugar over them.

Baking

  • Bake in the preheated oven for about 12-15 minutes or until the edges are golden but the centers are still soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
