Cinnamon Roll Cheesecake Cookies

Ingredients
  

Cookie Dough

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Cheesecake Filling

  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1/4 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract (for frosting)
  • 1/2 cup chopped nuts (optional) For added texture and flavor.

Topping

  • to taste extra cinnamon and sugar for sprinkling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth.
  • Add the eggs, one at a time, along with the vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together flour, baking powder, ground cinnamon, and salt.
  • Gradually incorporate the dry ingredients into the butter mixture, mixing just until combined.
  • In another bowl, mix the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.

Assembly

  • Take a scoop of cookie dough and flatten it slightly in your palm.
  • Add a spoonful of the cheesecake mixture in the center.
  • Fold the edges of the cookie dough over the cheesecake filling and roll it into a ball.
  • Place it on the baking sheet.
  • Repeat the process until all of the dough and filling are used.
  • Sprinkle a mixture of cinnamon and sugar on top of each cookie.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Let them cool on a wire rack.

Notes
