Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, melted

For the filling

  • 1 cup Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 2 lemons Use fresh lemons for best flavor.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  • In a medium bowl, mix the flour, powdered sugar, and melted butter until the mixture resembles wet sand. Press this mixture evenly into the bottom of the prepared baking pan. Bake for 15 minutes until lightly golden.

Making the filling

  • In another bowl, whisk together the Greek yogurt, granulated sugar, eggs, lemon juice, lemon zest, vanilla extract, baking powder, and salt until smooth.
  • Pour the lemon filling over the baked crust, spreading it evenly.

Baking

  • Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and slightly firm to the touch.

Cooling and serving

  • Once baked, let the bars cool in the pan. Transfer them to the refrigerator and chill for at least 2 hours before slicing into squares.
  • Dust with extra powdered sugar before serving if desired.

Notes
