  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream Can be substituted with coconut milk for a vegan option.
  • 1 large onion, chopped Sautéing enhances sweetness.
  • 4 cloves garlic, minced Sautéing enhances flavor.
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons olive oil

  • Fresh basil For garnish.
  • Grated Parmesan cheese For serving.

Instructions
 

Preparation

  • Chop the tomatoes, onion, and garlic into manageable pieces.

Cooking

  • Pour the chopped tomatoes and broth into a slow cooker.
  • Add the onion, garlic, salt, and pepper, then drizzle the olive oil over the top.
  • Stir well to combine the ingredients.
  • Set the crockpot to low for 6 to 8 hours or high for 3 to 4 hours.
  • During the last 30 minutes, stir in the heavy cream.
  • For a smoother texture, use an immersion blender or transfer to a traditional blender and blend until desired consistency.

Serving

  • Ladle the soup into bowls, garnish with fresh basil and grated Parmesan cheese.
  • Serve with crusty bread or grilled cheese sandwiches.

Notes
