  • 1/2 cup butter, softened Make sure it’s at room temperature
  • 3/4 cup brown sugar Packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup unsweetened shredded coconut
  • 1 cup chocolate chips Semi-sweet

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry mixture into the wet ingredients, stirring gently until just combined.

Baking

  • Fold in the shredded coconut and chocolate chips until evenly distributed.
  • Scoop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake for about 10-12 minutes, until the edges are golden brown and the centers are still soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
