Cookie Ingredients

  • 1 cup shredded coconut Use fresh for better flavor.
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Should be at room temperature.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and smooth.
  • Beat in the egg and add the vanilla extract. Mix until well combined.
  • In a separate bowl, combine the all-purpose flour, baking soda, salt, and shredded coconut. Mix until evenly distributed.
  • Gradually add the dry mixture to the wet mixture and mix gently, being careful not to overwork the dough.

Baking

  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto a baking sheet, leaving a couple of inches between each cookie.
  • Bake in the preheated oven for 10 to 12 minutes, until edges are lightly golden and centers are set.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, chill the dough for an hour before baking to prevent spreading. Experiment with adding chocolate chips or nuts for variations.
