Ingredients
  

For the French Toast

  • 8 slices thick bread Brioche or challah recommended
  • 4 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup sugar
  • 1 cup shredded coconut (unsweetened)
  • 1 cup cream cheese, softened
  • cup powdered sugar
  • ½ cup fresh fruit, chopped (such as strawberries or bananas)
  • as needed butter or oil for frying

Instructions
 

Preparation

  • In a mixing bowl, beat together the eggs, milk, vanilla extract, sugar, and cinnamon until well combined. Set this mixture aside.
  • In another bowl, blend the softened cream cheese with the powdered sugar until smooth. Optionally, add chopped fresh fruit into this mixture.
  • Take two slices of the bread. Spread a generous amount of the cream cheese mixture on one slice and top with another slice to create a sandwich. Repeat for the remaining slices.
  • Dip each sandwich into the egg mixture, ensuring both sides are well-coated but not overly soaked.
  • Place the shredded coconut on a plate and press each side of the coated sandwich into the coconut, covering it completely.

Cooking

  • Heat a skillet over medium heat and add butter or oil. Once hot, gently place the coconut-crusted sandwiches in the skillet.
  • Cook until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and keep warm.

Serving

  • Serve immediately with your favorite toppings, such as maple syrup or additional fresh fruit.

Notes

Press the coconut firmly onto the bread for a hearty crust. Toasting the shredded coconut lightly before use can enhance its flavor.
